Weeknight Meals: Mediterranean Pizza

Yesterday I shared a glimpse (through iPhone photos) my trip around a local street fair/vintage market. While there I had a great snack, and it has already become my new favorite healthy meal!!!! A little vegetarian-style Mediterranean 'Pizza' - I have made one every day since! They are filling and simple and oh SO tasty!!!!!

Here is what you will need (Not shown- EVOO, spices and fresh ground pepper):

Then Chop cucumber, tomato and olives. Add to Bowl, add spices (I did an italian herb mix bc I was out of dried oregano), fresh cracked pepper and a drizzle of EVOO - then mix. Heat up pita, I drizzled pan with a swirl of EVOO and then warmed both sides. Once warm slather with Hummus, Add Veggies, top with crumbled Feta. Slice & Enjoy!
