After such a great response the first time I shared a simple weeknight meal (here) I thought, lets go again!!! I am salad queen! I could literally eat them everyday- No lie! I keep them interesting by changing up my toppings!
Last night's was a pretty basic, and is my go to! Pretty much 8.9 out of ten times if I say I had a salad for dinner it was some combo of these items. I do change it up but this is my go-to! (The small type are other items I frequently use in this 'go-to' salad however are not pictured above)
Tons of veggies - usually any and everything on hand. Romaine (or Bagged Mixed Greens). Kidney beans (their buddy Mr Garbanzo Bean was left out bc he wasn't in the pantry, but the pair regularly join the party together!). Handful of cold plain cooked whole wheat pasta. Dried cranberries and toasted walnuts (these two, or raisins/sunflower seeds are in heavy rotation). Dressing was a bit of light Ranch (guilty pleasure!), Balsamic, Red Wine Vinegar & Salt N'Pepper.
I love the addition of a handful of pasta to my salad, especially when I make a large one as my dinner. They make the salad more filling, and make it have a longer lasting 'full' sensation. Super easy, pretty darn healthy and one of my favorites!!! What are your favorite salad fixings????

ReplyDeleteLooks yummy! I love salads, too! We like to put dried fruits, nuts, beans, pear, apples, and veggies in ours! We also love to make our own dressings, and sometimes we make the salads a bit heartier by adding chicken, pork, or steak! Thanks for sharing!

Mmm...the pasta is a great addition! Looks so good. We usually have goat cheese or feta, arugula, tomatoes and whatever else we have in the house!
ReplyDeleteEver since I wrote this post, I've made it a point to have a salad almost everyday. You're totally right... Love that you can switch it up a million ways (never gets old, and an easy way to cram a bunch of veggies in!). Some of my favorite toppings: edamame, avocado, cranberries, walnuts, grilled veggies, leftover meat, 'healthy' croutons, shredded carrots... (endless!) =)

ReplyDeleteI'm a salad girl too. My favorite thing to do is get rotisserie chicken from the grocery store, shred it up and add it onto my salad and then add whatever other veggie toppings I crave!

ReplyDeleteThis salad look amazing and so healthy! I've never thought to put pasta on my salad, but that's a great idea! I sometimes put brown rice in mine for a similar effect, but it takes a really long time to cook, so wheat pasta would be way easier. And I LOVE dried cranberries and kidney beans in salads. Thanks for the recipe!

Yum! This looks delicious! I love salads. I make one with cucumber, tomatoes, sweet onions, dried cranberries, salad almonds toppers, and goat cheese. Then I put Raspberry Vinaigrette on it. :)
